Simple Vanilla Cupcake Recipe
Ingredients:
For the Cupcakes:
- 1 1/2 cups self-raising flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup whole milk
For the Vanilla Buttercream Frosting:
- 1 cup unsalted butter, softened
- 4 cups confectioners' sugar (powdered/icing sugar)
- 2 teaspoons vanilla extract
- 2-3 tablespoons whole milk
- Food colouring (optional)
Instructions:
For the Cupcakes:
1. Preheat your oven to 180°C (350°F). Line a cupcake tin with paper liners. We recommend using More Cuppies for excellent results that look fabulous
2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes.
3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
4. Gradually add the self-raising flour, alternating with the milk. Begin and end with the flour. Mix until just combined; be careful not to over-mix.
5. Using an ice cream scoop or a spoon, fill each cupcake liner about 2/3 full with the cupcake batter.
6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the centre of a cupcake comes out clean.
7. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
For the Vanilla Buttercream Frosting:
1. In a large mixing bowl, beat the softened butter until creamy and smooth.
2. Gradually add the confectioners' sugar, one cup at a time, mixing well after each addition.
3. Stir in the vanilla extract.
4. Add 2-3 tablespoons of whole milk to achieve your desired frosting consistency. You can adjust the milk as needed.

Decorating:
1. Once the cupcakes are completely cooled, pipe or spread the vanilla buttercream frosting on top.
